Harissa Spiced Aubergine and Tomato
Our Harissa-Spiced Tomato Ragu with Roasted Aubergine and Sweet Peppers is made with 18 whole-food ingredients.
We use with San Marzano tomatoes, prized for their natural sweetness and add sun-dried tomatoes for intensity. The warm spice comes from Belazu’s smoked harissa, a cook’s favourite, lifted with fresh rosemary, cumin, coriander and oregano. The roasted aubergine and peppers bring some caramelised sweetness, while lentils add body and an earthy richness. We finished the sauce with cider vinegar and black lime.
It's a fantastically versatile sauce. Perfect for a quick shakshuka, with lamb meatballs, baked halloumi and almost any kind of chicken from cooked shredded to roasted thighs.
